With Christmas around the corner you possibly have a few parties to attend or guests coming over for a celebratory drink. I find that many of these social events require a plate to be prepared for sharing, but often time is limited and I can be stuck for ideas. Sound familiar?
These sausage rolls are meat free, easy to prepare and have a middle eastern twist so they aren’t your standard plate. They are also delicious served with chutney and yoghurt. My boys don’t notice that there isn’t any meat as the ingredients are filling. They freeze well so if you make a double batch you just have to pop them in the oven. Happy days!

Vegetarian Sausage Rolls with a Middle Eastern Twist

Description
A vegetarian twist on the classic sausage roll.
Ingredients
- 1 onion chopped
- 100gm mushrooms chopped
- 1 cup oats
- 300gm hard tofu chopped
- 80gm spinach (frozen or fresh)
- 1 tbspn Djon mustard
- 1 tbspn chia seeds
- 1 cup almonds (150gm) soaked for 30 mins then chopped
- 1 tspn salt, decent shake of pepper
- 1 tbspn of Za’atar spice mix (see note)
- 1 egg
For Assembly:
- Sesame seeds for sprinkling
- 1 tbsp Za’atar for sprinking
- 1 egg beaten for wash
- 3 sheets of frozen puff pastry
Instructions
- Preheat oven to 220 degrees celsius
- Pull the puff pastry out of the freezer and begin to thaw on the bench
- In a food processor blitz all ingredients until there are no obvious large chunks
- Sit mixture for a few minutes while you line your oven trays with paper, this allows the chia seeds to expand and the mixture to thicken
- Slice each puff pastry sheet in half and fill lengthways with a few tablespoons of mixture down the centre
- Fold each sheet over pressing carefully so the join is on the bottom and they now resemble 3 long logs
- Slice each log into desired size (4-6 pieces)
- Place on lined trays and brush with egg wash
- Sprinkle with sesame seeds and additional Za’atar spice
- Bake for 20-30 minutes until golden brown and puffed
Notes
- Za’atar is a middle eastern spice mix found in most supermarkets or speciality stores
