Healthy Homemade Granola

Ingredients

  • 23 cups oats (source GF oats if you are avoiding gluten)
  • 23 cups flaked coconut
  • 23 cups flaked almonds
  • 2 cups sunflower seeds
  • 2 cups pepitas
  • 1 cup roughly chopped brazil nuts
  • 1 cup roughly chopped almonds
  • 1 cup roughly chopped hazelnuts
  • 1/2 cup cacao nibs
  • 1/2 cup linseeds
  • 1/2 cup chia seeds
  • 1/2 cup hemp seeds
  • 1/2 cup melted coconut oil
  • 1/2 cup rice malt syrup (honey or maple would be fine too)
  • 1 tablespoon of cinnamon
  • 2 tablespoons of maca powder
  • Big pinch of sea salt

Instructions

  1. Preheat oven to 200 deg & line 4 x baking trays with paper
  2. Into a large bowl mix all nuts and seeds
  3. In a jug melt coconut oil with rice malt syrup and stir through maca powder & cinnamon
  4. Pour wet ingredients into dry ingredients and mix well
  5. Spread granola onto 4 trays and bake for around 10-15 minutes* (see notes) depending on your “toasty preferences”
  6. Allow to cool before storing
  7. Top with goji berries & serve with your favourite milk or yoghurt

Notes

  • I like to watch the granola closely as it burns quickly. I switch the trays around giving them a mix with a fork every few minutes
