Ingredients
- 2–3 cups oats (source GF oats if you are avoiding gluten)
- 2–3 cups flaked coconut
- 2–3 cups flaked almonds
- 2 cups sunflower seeds
- 2 cups pepitas
- 1 cup roughly chopped brazil nuts
- 1 cup roughly chopped almonds
- 1 cup roughly chopped hazelnuts
- 1/2 cup cacao nibs
- 1/2 cup linseeds
- 1/2 cup chia seeds
- 1/2 cup hemp seeds
- 1/2 cup melted coconut oil
- 1/2 cup rice malt syrup (honey or maple would be fine too)
- 1 tablespoon of cinnamon
- 2 tablespoons of maca powder
- Big pinch of sea salt
Instructions
- Preheat oven to 200 deg & line 4 x baking trays with paper
- Into a large bowl mix all nuts and seeds
- In a jug melt coconut oil with rice malt syrup and stir through maca powder & cinnamon
- Pour wet ingredients into dry ingredients and mix well
- Spread granola onto 4 trays and bake for around 10-15 minutes* (see notes) depending on your “toasty preferences”
- Allow to cool before storing
- Top with goji berries & serve with your favourite milk or yoghurt
Notes
- I like to watch the granola closely as it burns quickly. I switch the trays around giving them a mix with a fork every few minutes
