Over the last ten years I’ve realised that I don’t digest wheat or sugar all that well and so my go-to toast for breakfast became a journey of discovery. I love granola but the store bought variety are laden with hidden sugars and leave me feeling bloated and hungry.
So on a mission to make my own I’ve tweaked this recipe along the way, it’s great as you can control all the ingredients and it keeps the metabolism moving (if you get what I mean). It’s also fabulous to mix up a bit with new seeds and spices.
The only down side of making granola in my opinion is that despite producing a large quantity enough to fill a 5kg jar, we seem to run out every 2 weeks.

Healthy Homemade Granola

Ingredients
- 2–3 cups oats (source GF oats if you are avoiding gluten)
- 2–3 cups flaked coconut
- 2–3 cups flaked almonds
- 2 cups sunflower seeds
- 2 cups pepitas
- 1 cup roughly chopped brazil nuts
- 1 cup roughly chopped almonds
- 1 cup roughly chopped hazelnuts
- 1/2 cup cacao nibs
- 1/2 cup linseeds
- 1/2 cup chia seeds
- 1/2 cup hemp seeds
- 1/2 cup melted coconut oil
- 1/2 cup rice malt syrup (honey or maple would be fine too)
- 1 tablespoon of cinnamon
- 2 tablespoons of maca powder
- Big pinch of sea salt
Instructions
- Preheat oven to 200 deg & line 4 x baking trays with paper
- Into a large bowl mix all nuts and seeds
- In a jug melt coconut oil with rice malt syrup and stir through maca powder & cinnamon
- Pour wet ingredients into dry ingredients and mix well
- Spread granola onto 4 trays and bake for around 10-15 minutes* (see notes) depending on your “toasty preferences”
- Allow to cool before storing
- Top with goji berries & serve with your favourite milk or yoghurt
Notes
- I like to watch the granola closely as it burns quickly. I switch the trays around giving them a mix with a fork every few minutes

I buy them from the local health food store but I noticed the other day you can even find them in the “healthy” section at Coles supermarkets! slightly addicted to them.
